Recipe: Double Dark Chocolate Muffins Ingredients 2/3 cup Dutch process cocoa 1 3/4 cup unbleached, all-purpose flour 1 1/4 cups sugar 1 tsp. baking powder 1 tsp. baking soda 3/4 tsp. salt 1 cup chocolate chips 1/2 c. applesauce 2 tbs. full flavor molasses 1 cup oat milk 2 tsp. vanilla extract 2 tsp. vinegar 8 tbs. earth balance, melted Instructions Preheat the oven to 425. In a large mixing bowl, whisk together dry ingredients. Set aside. In separate bowl mix together wet ingredients. Stir together until combined. Scoop batter into 12 muffin tins.     Recipe: Orange Buttercream Icing Ingredients 1/4 cup shortening 1/4 cup margarine, softened 2 cups confectioners’ sugar 2 tablespoons orange juice (not from concentrate) 1 tablespoon lemon zest 1 1/2 teaspoons vanilla extract Instructions In a mixer, cream the sugar and shortening together until light and fluffy. Add the confectioners’ sugar in three batches. When well combined, add the orange juice and lemon zest and mix on high speed for 3-5 minutes until fluffy.
