Kelly’s Going-Bananas Banana Bread

I know, I know, we all have great banana bread recipes. But this, I PROMISE you, is worth a try. My girls, who don’t even LIKE bananas are on this stuff like white on rice.

It’s heavy on the sugar, but also uses 100% whole wheat flour and olive oil. For me, it’s a case of giving them something sweet while still making sure that it at least has some nutritious value (a fair amount of protein and good fat). I’m also struggling with going BACK on the carni-vegan bandwagon, so anything I can make that tastes yummy and does not involve dairy is great!

Recipe: Kelly’s Banana Bread

Ingredients

  • 3 large eggs
  • 1 1/2 c. sugar
  • 3/4 c. extra virgin olive oil
  • 2 mashed ripe bananas
  • 1 3/4 c. whole wheat flour
  • 1 1/2 tsp. baking soda
  • 3/4 tsp. fine grain sea salt

Instructions

  1. Preheat oven to 350 and lightly grease a 9x5x3 inch loaf pan.
  2. In large bowl whisk eggs, sugar, oil, and bananas until well blended.
  3. In separate bowl whisk flour, baking soda and salt.
  4. Add dry ingredients to egg/banana mixture and stir with spatula until just combined. Pour into loaf pan.
  5. Bake 60-65 minutes, or until bread bounces back when lightly tapped in the middle. Cool in pan for 10 minutes then move to cooling rack.
